What do you make friends, coworkers, and extended family members for Christmas? They don't want any more cookies and while everyone appreciates your amazing macaroni-decorated crafts, we're a little old for that aren't we? Enter: bitter, sour, sweet and totally pretty candied grapefruit peel! Make a big batch, wrap it in some parchment and tie it with a bow.
- 2 large grapefruits
- 1 cup sugar
Peel grapefruits and cut into 1/2” strips leaving just a touch of white pith on the rind. Place in a small saucepan and cover with cold water. Bring to a boil, then drain; repeat twice.
In the same saucepan, bring peel, 1 cup sugar, and ½ cup water to a boil. Simmer on low heat until peel is translucent, 15–20 minutes. Drain; transfer peel to a wire rack and let dry for about 3 hours. Toss in LOTS of sugar.
P.S. Pop a few of these yummy strips of bitter goodness on top of a holiday cocktail to add a little sparkly something. Or, dip them in chocolate because...chocolate.
