 Ramen is one of our favorite guilty pleasures. We have our favorite joint in downtown LA--Daikokuya. But with a wait that's regularly at least an hour long (and no reservations) sometimes we need to sate our cravings at home. This vegetarian ramen is full of rich miso flavor and spiked with sour and spicy kimchi for a full-mouth flavor explosion. The recipe is made all the easier by Trader Joe's new Miso Ginger Broth--a salty miso broth with peppery ginger that makes the base of this soup. We fortified it with some onion and garlic to give it a bit rounder flavor--something it definitely needed. 

Ingredients serves 2-4 

2 qts Trader Joe's Miso Ginger Broth

1 yellow onion, chopped in rough chunks

5 cloves garlic, crushed

1 bag, ramen noodles. We like these

4 green onions, chopped

Spicy kimchi

Sesame seeds

Toasted Sesame Oil

Nori

Directions:

Place yellow onion, garlic, and broth in a large stock pot and bring to a simmer. Cook for about 30 minutes on low until onion is very soft. Remove onion chunks from the stock. 

Boil ramen noodles in the broth for 3-4 minutes until still just a bit chewy. Ladle noodles and broth into a bowl. Top with your taste of green onion, kimchi (we like a lot!), sesame seeds, and nori. Drizzle with toasted sesame oil and sriracha if you crave a bit more spice. Slurp it up!
