We don't know about you, but we crave a little crunch on our yogurt. Store-bought granola is usually packed with sugar and yucky fats. So we decided to come up with our own perfect recipe! This mix is a little sweet, a little nutty, and really yummy!
2 cups old fashioned rolled oats
1 cup raw almonds, chopped OR 1 cup slivered almonds (depending how much crunch you like)
4 tablespoons coconut oil
4 tablespoons raw honey
1/2 tsp cinnamon
1 tsp vanilla extract
1 pinch salt
1/2 cup dried sour cherries
1 cup toasted coconut chips, broken into small pieces
Directions: Preheat oven to 350 degrees. Combine oats and almonds in a large bowl. In a small saucepan over low heat (or in the microwave), melt coconut oil and honey together. Pour over oat mixture. Add cinnamon, vanilla, and salt and stir well until combined. Line a baking sheet with foil, and spread oat mixture evenly across the pan. Bake for 25 minutes, mixing the oats halfway through to ensure even crisping. Allow to cool on baking sheet until totally crisp and cool. Remove and toss in a large bowl with cherries and coconut chips.
